Stuffed Chicken Dinner Recipe
Spinach Stuffed Chicken:
Ingredients
- 4 chicken breasts
- 1 tablespoon olive oil or avocado oil
- 1 tesapoon paprika
- 1 teaspoon salt, divided
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 4 ounces cream cheese, softened
- ¼ cup grated Parmesan
- 2 tablespoons mayonnaise
- 1 ½ cups chopped fresh spinach (I cooked my fresh leaf spinach down in a pan before)
- 1 teaspoon garlic, minced
- ½ teaspoon red pepper flakes Instructions
- Preheat oven to 375 degrees.
- Place the chicken breasts on a cutting board and drizzle with oil.
- Add the paprika, 1/2 teaspoon salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.
- Use a sharp knife to cut a pocket into the side of each chicken breast. Set chicken aside.
- Add cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper and remaining ½ teaspoon of salt to a small mixing bowl and stir well to combine.
- Spoon the spinach mixture into each chicken breast evenly.
- Place the chicken breasts in a 9×13 baking dish. Bake, uncovered, for 25 minutes or until chicken is cooked through.
Squash Recipe:
SUPER EASY!
I didn't really use measurements, sorry LOL
2 medium size yellow squash
Salt
Pepper
Parmesan Cheese
Olive oil
Preheat oven to 350.
Cut squash into discs.
Place on baking sheet (I drizzled some olive oil on sheet to prevent sticking)
I drizzled a little olive oil on top of the squash
Salt, Pepper to taste.
Sprinkle Parmesan over squash (as much or as little as you'd like)
Bake 10-15 minutes.
Cheezy Green Beans:
This is my mom's recipe!!
6 slices of bacon
1 onion
2 cans green beans
1/8 oz velveeta
Cook bacon until slightly browned, add onions to taste. Add 2 cans green beans. Add velveeta & stir until melted.
BUT I used half a bag of fresh green beans and let them cook in a pan until they were softer. I cooked the bacon in the microwave #easy. I cooked the onion in a pan too then added the bacon to it for flavor. Then to the green beans, I added cooked bacon (tore into pieces, cooked onion, and 4oz of velveeta.)
So yummy & easy!!
